its really been puzzling me as to why and what Team Switzerland is...

Switzerland is a neutral country. So Team Switzerland is neither for Edward nor Jacob.
In the book, the term 'Switzerland' is referred to as a neutral country. Therefore, 'Team Switzerland' means a neutral team.
Team Switzerland is neither vampire or werewolf territory. Neither Jacob nor Edward.
It's a reference to the part in Eclipse when Bella refuses to take sides between Jacob and Edward.
