Bobbie, I have a hankering for some kind of food other than my own
regional specialties (which mostly feature barbecue and catfish).
Could you find me a couple of interesting recipes from Chile? It's
fine if the recipes are in Spanish, as long as the ingredients are
things that are likely to be available in the US.

Here are a few typical Chilean recipes.
Pastel de Choclo (corn and meat pie) is a typical Chilean meal that I love.
?Pastel de Choclo?Chilean Corn and Meat Pie is similar to shepherd?s
pie. Fresh corn would always be used in Chile but frozen, well-drained
corn is a good substitute.
2 cups chopped onion
2 tablespoons vegetable oil
1-1/2 pounds ground beef
1 tablespoon ground cumin
1 teaspoon dried basil
Salt and freshly ground pepper to taste
2 boneless chicken breasts
1/2 cup black olives, pits removed, halved
1/2 cup raisins
4 hard boiled eggs, quartered
1 kg (2 pounds) frozen corn, thawed and well drained
2 tablespoons butter
1/2 cup milk
2 egg yolks
2 tablespoons icing sugar
1 tsp chili flakes
Heat 1 tablespoon oil in skillet on medium heat. Add onions and cook
until translucent, about five minutes. Add beef, 2 teaspoons cumin and
basil. Cook until meat is browned. Season well Spread mixture over 9?
X 13? casserole.
Season chicken breast with salt, pepper, and remaining cumin. Fry in
skillet in remaining oil until browned. Cut into 1-inch chunks. Place
over beef. Sprinkle over olives and raisins. Arrange egg quarters on
top.
Preheat oven to 400 F.
Grind corn in the food processor until rough in texture leaving some
large and some small pieces. Melt butter in a large saucepan. Add
corn, and milk. Bring to boil, stirring. Reduce heat to low and
simmer stirring frequently for 5 minutes. Stir in egg yolks and cook
1 more minute. Spread corn mixture evenly over the meat. Sprinkle with
icing sugar and chili flakes.
Bake for 35-40 minutes until the crust is golden brown.?
You should serve the pastel de choclo with ?CHILEAN SALAD? which is an
onion and tomato salad.
For desert, a Brazo de Reina. This is a cream roll filled with manjar,
also known as dulce de leche.
