What is the best way to record an interview with someone when you are both in different locations?

Though I'm following good advice posted just above, I do lotsa skyped shows...
I'd suggest
recording yourself with some basic software (audacity, soundforge etc..)
then run a line out from your sound card to any recording device (computer, iriver etc..)
then just mesh the files in production and badabing
its totally possible to record a group conversation, everyone your talking to will record to whatever device you use, and you'll still be recording yourself locally. Of course make sure everyone uses headphones and turns their speakers off/down.
There are software options too that work great.
I happen to have a haunted iriver, so I can actually record me and the other guy onto the iriver, Its not supposed to let me, but it does. nonetheless I always prepare to record seperate tracks just in case the haunting ever ends.

Sounds a bit complicated.
I'd like to find a more simple solution.
I did my first ever skype interview on my last show at www.mymarilyn.ca
I used SkypeOut from my computer to call my guest on his landline phone. To record the call I used http://www.powergramo.com/download.htm it is a free program. It recorded my 26 minute phone call just fine, however, the caller's voice was much lower in volume than my voice. I used audacity to cut up each time we spoke and adjusted the volume so we were even. Too much work I think. I'm going to look for something that splits the 2 voices into separate channels for easier editing. But it has to be free or else I'll just stick to what I've got.

If you have a mini disc, definitely use the setup I mentioned, the mini disc will sound great.
I thought about conferencing and considered that some of your guests may not have cpu's. I know you buy can some skype credits or something and dial out to any real phone # but I am not sure if after you are connected you can add more people who are on skype. Definitely don't follow the setup offered in skypes PDF trying to sell you "Virtual Cables", if you wanna buy some "Virtual Gear" I have a great "Virtual Bridge" i'll sell you for cheap.

If you're willing to spend some time editing and processing the interview afterwards, you can get surprisingly clean results but just using a relatively cheap phone tap. Record the phone into one channel, your local microphone into another channel, and then cut them apart in editing, adjust levels, and put them back together.

Audacity, GarageBand, or BIAS PEAK (http://www.bias-inc.com/products/peakPro5/) all have the features to allow this.

Yes, you can use Skype out to call. There are people that know far more than I am.
